Veggie Pasta Salad*

Serves: 4 1-1/2 cup servings.
Exchanges: 1/2 meat, 1 1/2 breads, 1/2 vegetable, 1 fat
Ingredients:
4 ounces bow tie pasta
2 cups chopped leftover vegetables (broccoli, asparagus, green beans, onions, peppers)
1/2 cup sliced grape tomatoes
1/2 cup crumbled seasoned feta cheese (or any left over shredded cheese)
1/2 cup light balsamic vinaigrette dressing
1/4 teaspoon salt
1/4 teaspoon black pepper
Preparation:
Cook pasta according to package directions, omitting salt and fat. Drain and toss with remaining ingredients in a large bowl. Chill and serve.
