Almost Too Easy Vegetable Beef soup

8 oz. extra lean ground turkey or beef (beef is best)
1 & 3/4 cups (1 14 1/2 oz. can) reduced fat and sodium beef broth
1 cup reduced sodium tomato juice
1 - 10 oz. pkg. frozen mixed veggies, thawed
1/2 cup chopped onions
1 tsp. parsley flakes
1/8 tsp. black pepper
I also added maybe a tsp of Wortershire Sauce, a couple of shakes of McCormicks steak seasoning, and 1 small potato - diced.
In large skillet sprayed with butter flavored spray - brown meat.
Spray slow cooker with butter fl. spray . Combine meat, beef broth and tomato juice. Add veggies, onion, (potato if using) parsley and black pepper. Add W. sc. if using. Mix well. Cover and cook on low for 6 to 8 hours. mix well b/4 serving.
Two things - I did not have much time -- so I cooked it on high for 3 hours. Also I thought I was thawing gr. beef and when I opened the pkg. it was two cube steaks. :-( I took one steak and cut it into very small pieces and browned this and used it for the meat. It was no more than 1/4 #. The other I browned and cooked thru and then used my "Food Saver: (a great appliance) to pkg. and freeze the other steak. Now when I have my chicken (eat almost every nite ) my husband can have a cube steak.
