    Country Vegetable Soup

    16 oz ground 90% lean turkey or beef
    1/4 cup chopped onion
    1 3/4 c (one 14 1/2 oz can) stewed tomatoes, undrained
    1 cup (one 8 oz can) Hunt's tomato sauce
    1 cup water
    1 3/4 c (one 14 1/2 oz can) Swanson Beef Broth
    1 T Brown Sugar Twin
    1 1/2 cup frozen cut carrots
    1 1/2 cups frozen cut green beans
    1 cup frozen peas
    2 cups (10 ounces) diced raw potatoes
    1 tsp dried parsley flakes

    In a large saucepan sprayed with butter flavored cooking spray, brown meat and onion. Spoon mixture into a slow cooker container. Add remaining ingredients. Mix well to combine. Cover and cook on LOW for 6-8 hours. Mix well just before serving.

    Serves 6 (1 1/2 cups ea) Each serving equals:
    HE: 2 1/3 veg, 2 protein, 2/3 bread, 7 cal opt
    211 cal, 7 gm fat, 17 gm protein, 20 gm carbs,
    807 mg sodium, 66 mg calcium, 4 gm fiber
    Diabetic: 2 veg, 2 meat, 1 starch
