    Mexican Two Bean Chicken Soup
    1 med. zucchini, coarsely chopped
    1 can 15oz. black beans, drained & rinsed
    1 can 15oz. pinto beans, drained & rinsed
    1 can 8 3/4 oz.whole kernel corn, drained
    2 cans 14 1/2 oz chicken broth
    1 jar 16oz. thick and chunky salsa
    3 cups shredded cooked chicken
    1 garlic clove, pressed
    2 T. chili powder
    1 t. cumin
    Optional toppings: shredded cheese, sour cream, tortilla chips
    Combine all excepts optional toppings into large pot. Bring to boil, reduce heat simmer for 30 minutes.
    1 2/3 cup serving 310 calories, 9 grams fat, 8 grams fiber

    I just finished making this, it's very good. If you like it spicey use hot salsa, if not use mild.
