    List of Ingredients




    SALSA CHICKEN STEW *****

    1 ¾ cups canned chicken broth
    6 oz cooked chicken, diced
    ½ cup chopped onion
    ½ cup chopped celery
    ½ teaspoon salt
    ½ teaspoon minced garlic (I add more)
    ¼ teaspoon pepper
    6 oz diced potatoes
    1 cup frozen whole kernel corn
    1 cup frozen sliced carrots
    1 ¾ cups tomato sauce w/tomato bits
    ¾ cup chunky salsa
    1 teaspoon dried parsley flakes

    In large saucepan, combine chicken broth, chicken, onion, celery, potatoes, corn, carrots, salt, garlic and pepper. Cover and simmer 15 minutes. Add tomato sauce, salsa and parsley flakes. Continue cooking over low heat for 10-15 minutes.

    4 (1 ½ cup) servings

    Each serving equals: 2 ¼ Vegetable; 1 ½ Protein; 1 Bread; 18 optional calories
