Spinach Casserole
1 pkg. frozen spinach, chopped thawed and drained
16 oz Fat free cottage cheese
1 cup shredded Fat free cheddar cheese
1/2 cup egg substitute
6 Tbl flour
Mix all together and then bake in a square pan (spray with Pam first) for 1 hour on 350 degrees.
Cut into 4 servings. I make this and freeze them in small containers and then heat in microwave for about 3 minutes. This is a great lunch.
You can add other vegies - mushrooms, artichoke hearts, broccoli. Whatever you like.
I would count this recipe as 1.5 pts for the flour from my pts. allowance. This one is 4 pts per serving on Flex.
I made this without the flour and it came out fine so I would leave it out. Just be sure to squeeze the water out of the spinach.
