    Rough Mashed Potatoes

    Serves 5 (1/2 cup)

    2 cups water
    1 lb russet potatoes, washed and diced, but not peeled
    1/2 cup evaporated fat-free milk
    2 tbsp light margarine
    1/4 cup light sour cream
    1/8 tsp garlic powder
    1/4 tsp salt
    1/8 tsp black pepper

    Place the 2 cups water in a large saucepan. Place a steamer basket on the bottom of the saucepan; arrange the diced potatoes evenly in the basket, and cover the saucepan tightly.

    Bring the water to a boil and steam the potatoes for 8 minutes, or until they are just tender when pierced with a fork.

    Place the cooked potatoes in a serving bowl. Using a whisk, mash the potatoes. Add remaining ingredients and continue whisking until well blended. (The texture will be a bit lumpy.)
