    Butternut and White Bean Soup

    List of Ingredients


    • 1 cup chopped onion
    • 3/4 tsp cinnamon
    • 1/2 tsp cumin
    • 1 clove garlic, minced
    • 3 cups peeled, cubed butternut squash
    • 1/8 tsp pepper
    • 1 1/2 cup chicken broth
    • 1 can mexican style stewed tomatoes
    • 1 can diced tomatoes
    • 1 can great northern beans ,drained
    • crockpot
    • blender (optional)


    Instructions


    1. Mix all ingredents together in a crockpot and cook on low heat for 8 hours. If desired, remove about 2 cups of the soup, puree in the blender, and then return to crockpot.
