    List of Ingredients


    • Pumpkin Mix:
    • 1 29 oz can pumpkin
    • 2 tsp cinnamon
    • 1 tsp ginger
    • 1/2 tsp cloves
    • 1/4 tsp nutmeg
    • ----
    • Custard Mix:
    • 1 cup sugar
    • 8 each egg yolks
    • bring the following to a boil
    • 2 cups cream 1/2 vanilla bean 2 each cinnamon sticks
    • 10 each whole cloves
    • 4 coins ginger
    • ---
    • Topping
    • 3 Tbls granulated sugar
    • 3 Tbls brown sugar


    Instructions


    1. Mix all ingredents for the pumpkin mix together and reserve. Place cream, vanilla bean, cinnamon sticks, cloves and ginger in a saucepan and bring to a boil. Remove from heat and let steap. Mix sugar and egg yolks together. Temper the hot cream into the yolk mixture and strain. Add 4 Tbls pumpkin mixture to custard. Skim the foam off the top of the custard. Pour custard into serving dish.
    2. Bake at 300 degrees for 30 minutes or until custard sets.
    3. Chill the creme brulee/ Before serving, sprinkle each dessert with an even layer of sugar mixture.
