Pumpkin Creme Brulee

List of Ingredients
- Pumpkin Mix:
- 1 29 oz can pumpkin
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp cloves
- 1/4 tsp nutmeg
- ----
- Custard Mix:
- 1 cup sugar
- 8 each egg yolks
- bring the following to a boil
- 2 cups cream 1/2 vanilla bean 2 each cinnamon sticks
- 10 each whole cloves
- 4 coins ginger
- ---
- Topping
- 3 Tbls granulated sugar
- 3 Tbls brown sugar
Instructions
- Mix all ingredents for the pumpkin mix together and reserve. Place cream, vanilla bean, cinnamon sticks, cloves and ginger in a saucepan and bring to a boil. Remove from heat and let steap. Mix sugar and egg yolks together. Temper the hot cream into the yolk mixture and strain. Add 4 Tbls pumpkin mixture to custard. Skim the foam off the top of the custard. Pour custard into serving dish.
- Bake at 300 degrees for 30 minutes or until custard sets.
- Chill the creme brulee/ Before serving, sprinkle each dessert with an even layer of sugar mixture.
