    hOLIDAY SPECIAL TREAT, GOOD WITH OR WITHOUT NUTS.


    List of Ingredients


    • 1 CUP SUGAR
    • 3 EGGS BEATEN
    • 2/3 CUP CANNED PUMPKIN
    • 2/3 CUP (SELF-RISING) FLOUR
    • 1 tsp. CINNAMON
    • 3/4 CUP CHOPPED NUT (OPTIONAL) I use pecans.
    • 1 (8oz. pkg) cream cheese
    • 1 tsp VANILLA
    • 2 Tsp MARGAINE
    • 1 CUP SIFTED POWDERED SUGAR


    Instructions


    1. Preheat oven to 375 degrees F.
    2. Mix sugar, eggs and pumpkin in a bowl. Sift flour and cinnamon in another bowl.Combine the flour and pumpkin mixtures together, Grease a rimmed baking sheet with oil and line with greased wax paper.Extend paper over sidesof baking sheet. Pour batter in rectangular shape on wax paper and sprinkle with pecans. Bake for 15 minutes.
    3. For filling, beat cream cheese, vainalla, margarine, and powder sugar until smooth and creamy. Sprinkle a clean dish towel with powder sugar, flip cooked batter face down on towel, remove wax paper. Roll loosely and let set until cooled. Unroll cake. Spread with filling. Roll again without the dish towel. Wrap in aluminum foil and freez. Unwrap and slice while frozen.


    Final Comments


    Good around Halloween and Christmas.
