    Southwestern BBQ Chicken Salad

    A good resturant chicken salad.


    List of Ingredients


    • Dressing
    • 1 cup mayonnaise
    • 1 cup buttermilk
    • 1 pkg dry ranch dressing mix
    • 1 1/2 canned chipotle chili in adobo sauce
    • ----
    • 1 15.5 oz. can black beans
    • 1 15.5 can whole kernel corn
    • 1 large fresh red pepper cut into strips
    • 1 medium red onion sliced
    • grape tomatoes
    • 5-6 cups mixed salad greens
    • 4 6oz fresh chicken breast
    • BBQ sauce of choice
    • shredded cheddar cheese


    Instructions


    1. Blend first 3 ingredients. Add 1 1/2 chipotle chili minced plus 1 Tsp adobo sauce. Mix well. Refrigerate 1 hour. Prepare grill, cook chicken. Baste with BBQ sauce. Slice chicken into strips (may be served hot or cold).
    2. Assemble salad, add dressing. Top with chicjen strips and cheddar cheese.
