    List of Ingredients


    • 1/2 c olive oil or vegetable oil
    • 1 medium onion, chopped (1 1/2 cups)
    • 1/4 cup garlic, chopped
    • 2 28 oz cans diced tomatoes
    • 1 6 oz can tomato paste
    • 6 oz hot water
    • 1/2 cup fresh parsley or oregano, chopped
    • 1 Tbsp sugar
    • 2 tsp salt


    Instructions


    1. Heat oil in medium pot over medium heat.Add onions and saute stirring occasionlly for about 3-4 minutes. meanwhile disolve tomatoe paste with water and set aside. Add garlic to onion mixture and saute 1 minute longer. Add diced tomatoes, tomato paste and herbs. Increase heat to high and bring mixture to a boil, reduce heat and simmer sauce partially covered for 30-45 minutes, stirring occasionally. Add sugar and salt,using an immersion blender, blend until smooth.
    2. Note: If you do not have an emmerison blender, blend the tomatoes before adding them to the pot. Use extreme caution if blending hot liquids because they tend to splatter.
