    List of Ingredients




    * 1/2 cup chopped onion
    * 1/2 cup chopped bell pepper
    * 2 large garlic cloves, mashed
    * 1 bay leaf
    * 1/2 tbsp chopped pimiento
    * 1 broadleaf cilantro leaf
    * 2-1/2 cups no-salt added chicken broth
    * 1 cup brown or Valencia rice
    * 1/2 cup tomato sauce
    * saffron or paprika to taste
    * 1 whole chicken
    * 1/2 bottle red wine (use drinking wine, not cooking wine)


    Recipe



    In a large crockpot, on high heat, saute onion, bell pepper, garlic, bay leaf, pimiento, and cilantro in a small amount of water, til browned slightly.

    Add chicken broth, rice, tomato sauce, and saffron or paprika. Sit chicken on top and slow cook until chicken is tender and very light orange in color. Add wine and cook another 15 minutes or until wine evaporates.
