- 1/4 CUP BUTTER
- 2 CUPS SELF RISING CORNMEAL
- 1 1/2 CUPS ALL-PURPOSE FLOUR
- 2 1/2 CUPS BUTTERMILK
- 2 EGGS, LIGHTLY BEATEN
- 1 CUP CRACKLINGS
Instructions
- MELT THE BUTTER IN A CAST IRON SKILLET.
- COMBINE THE CORNMEAL AND FLOUR TOGETHER.
- IN ANOTHER BOWL, COMBINE THE EGGS, BUTTER MILK AND CRACKLINGS. ADD THIS TO THE CORNMEAL MIXTURE, STIR JUST TILL MOISTENED.
- POUR MIXTURE OVER THE MELTED BUTTER.
- BAKE IN A PRE-HEATED 425 DEGREE OVEN FOR 25 TO 30 MINUTES OR UNTIL GOLDEN BROWN.
