    List of Ingredients


    • 1/4 CUP BUTTER
    • 2 CUPS SELF RISING CORNMEAL
    • 1 1/2 CUPS ALL-PURPOSE FLOUR
    • 2 1/2 CUPS BUTTERMILK
    • 2 EGGS, LIGHTLY BEATEN
    • 1 CUP CRACKLINGS


    Instructions


    1. MELT THE BUTTER IN A CAST IRON SKILLET.
    2. COMBINE THE CORNMEAL AND FLOUR TOGETHER.
    3. IN ANOTHER BOWL, COMBINE THE EGGS, BUTTER MILK AND CRACKLINGS. ADD THIS TO THE CORNMEAL MIXTURE, STIR JUST TILL MOISTENED.
    4. POUR MIXTURE OVER THE MELTED BUTTER.
    5. BAKE IN A PRE-HEATED 425 DEGREE OVEN FOR 25 TO 30 MINUTES OR UNTIL GOLDEN BROWN.
