1-1/2 cups yellow cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar (optional)
1 teaspoon salt
3 teaspoons baking powder
2 eggs, beaten
1-1/2 cups buttermilk
1/4 cup bacon drippingsRecipe
Preheat oven to 400 degrees. Pour bacon drippings into an iron
skillet;
place skillet in the oven and heat until hot. Remove from oven
and set aside.
While skillet is heating, mix dry ingredients in a medium size
bowl.
Stir in the beaten eggs and buttermilk. Pour the hot bacon
drippings into mixture and stir until mixed but still slightly
lumpy.
Pour into the hot greasy skillet and bake 35 - 40 minutes or
until golden brown.
