THIS RECIPE WILL MAKE ABOUT A DOZEN HUSHPUPPIES AND CAN BE EASILY DOUBLED.
List of Ingredients
- 1/2 CUP CORNMEAL
- 1/2 CUP ALL PURPOSE FLOUR
- 1 TSP BAKING POWDER
- 2 TABLESPOONS WHITE SUGAR
- 1/4 TSP. BAKING SODA
- 1/2 CUP BUTTERMILK
- 1 EGG, SLIGHTLY BEATEN
- 1 SMALL ONION, CHOPPED FINE
- 1 1/2 TSP. VEGETABLE OIL
Instructions
- COMBINE CORNMEAL, FLOUR, BAKING POWDER, SUGAR AND SALT IN A MEDIUM BOWL, MIXING WELL.SET ASIDE
- DISSOLVE BAKING SODA IN BUTTERMILK IN A SMALL BOWL.
- ADD EGG, ONION, AND OIL AND STIR WELL. ADD DRY INGREDIENTS,MIX WELL.
- REFRIGERATE BATTER FOR ABOUT 15 MINUTES.
- HEAT DEEP HOT OIL TO 350 DEGREES. DROP BATTER INTO OIL BY TABLESPOONS. COOK JUST A FEW AT A TIME. FRY FOR 3 MINUTES ON EACH SIDE OR UNTIL GOLDEN BROWN.
- DRAIN WELL ON PAPER TOWELS.
