- 1 CUP CORN MEAL
- 1/2 CUP FLOUR
- 1/2 TEASPOON SODA
- 1 TEASPOON SALT
- 1/2 CUP COOKING OIL
- 2 EGGS, BEATEN
- 1 CUP BUTTERMILK
- 1 CUP CHOPPED ONIONS
- 3/4 CUP CHOPPED FRESH OR FROZEN OKRA
Instructions
- IF USING FRESH OKRA;TRIM, CUT IN ROUNDS AND DROP INTO BOILING SALTED WATER. COOK 4 TO 6 MINUTES UNTIL SOFT. DRAIN AND COOL.
- IF USING FROZEN OKRA JUST THAW AND DRAIN.
- MIX DRY INGREDIENTS.STIR LIGHTLY.
- BEAT TOGETHER EGGS, OIL, AND BUTTERMILK.
- ADD TO DRY INGREDIENTS AND STIR LIGHTLY.
- ADD CHOPPED ONIONS AND OKRA
- HEAT OIL IN A HEAVY 10 INCH SKILLET UNTIL SMOKING.
- POUR BATTER INTO PAN
- BAKE IN PREHEATED 450 DEGREE OVEN FOR 20-25 MINUTES.
