    • 1 CUP MASHED, COOKED SWEET POTATOES
    • 1/4 CUP SUGAR
    • 1 BEATEN EGG
    • 1 TABLESPOON. MARGERINE OR BUTTER, MELTED
    • 1 CUP MILK
    • 3 CUPS SELF RISING FLOUR
    • 1 TEASPOON BAKING POWDER
    • 1/2 CUP SHORTENING


    Instructions


    1. IN A MEDIUM BOWL MIX TOGETHER SWEET POTATO, SUGAR EGG AND BUTTER UNTIL SMOOTH.
    2. STIR IN MILK AND SET ASIDE
    3. SIFT TOGETHER THE FLOUR AND BAKING POWDER INTO A LARGE BOWL. CUT IN THE SHORTENING UNTIL THE MIXTURE RESEMBLES COARSE CRUMBS.
    4. MAKE A WELL IN THE CENTER OF THE DRY MIXTURE.
    5. PUT SWEET POTATO MIXTURE IN WELL. STIR UNTIL INGREDIENTS ARE JUST COMIBNED.
    6. TURN ONTO A WELL FLOURED SURFACE.KNEAD GENTLY FOR 10-12 STROKES.
    7. ROLL OR PAT DOUGH INTO 1/2 INCH THICKNESS
    8. CUT WITH BISCUIT CUTTER, RE-ROLL AS NECCESSARY
    9. PLACE BISCUITS 1 INCH APART ON A LARGE BAKING SHEET.
    10. BAKE AT 400 DEGREES FOR 15-20 MINUTES OR UNTIL LIGHTLY BROWNED
