    6 lbs. white beans
    10 lbs. ham hocks
    5 lbs. onions, chopped
    3 lbs. bell pepper, chopped
    1/4 c. dried parsley
    3 bunches green onions, chopped
    1/2 c. minced garlic
    1/4 c. Tony Chachere's
    1/4 c. Louisiana hot sauce

    Recipe



    Boil ham until completely cooked and then cube into bite size
    pieces.
    This can be done in advance.
    Put beans, onions, ham, garlic, seasoning and hot sauce in at
    least a 20 qt. stock pot.
    Add enough water to cook beans. Add as needed. Stir on occasion.
    Don't let stick.
    Cook until beans are tender.
    Needs to be a little thick when done. Not too runny.
    About 30 mins. before serving, add green onions, bell peppers
    and parsley.
