    • 1 1/2 CUPS OIL
    • 2 CUPS SUGAR
    • 3 EGGS
    • 3 CUPS SIFTED ALL PURPOSE FLOUR
    • 1 TEASPOON SALT
    • 1 TEASPOON BAKING SODA
    • 2 TEASPOON VANILLA EXTRACT
    • 1 1/2 TEASPOONS GROUND CINNAMON
    • 3 LARGE APPLES, PEELED AND CUBED
    • 1 CUP PECANS, CHOPPED


    Instructions


    1. COMBINE SUGAR, OIL AND EGGS AND BEAT ON MEDIUM SPEED UNTIL LIGHT AND FLUFFY.
    2. BLEND IN DRY INGREDIENTS.
    3. ADD VANILLA, APPLES AND NUTS, BLENDING WELL.
    4. GREASE AND FLOUR A TUBE OR BUNDT PAN.
    5. BAKE IN A PREHEATED OVEN AT 350 DEGREES FOR 1 HOUR AND 20 MINUTES, OR UNTIL CAKE TESTS DONE.
