THIS CAKE WAS POPULAR IN THE 1970'S WHEN THE WATERGATE SCANDAL WAS TAKING PLACE.
List of Ingredients
- 1 BOX PLAIN WHITE CAKE MIX
- 1 BOX INSTANT PISTACHIO PUDDING MIX
- 1 CUP VEGETABLE OIL
- 1 CUP GINGER ALE
- 3 LARGE EGGS
Instructions
- PLACE A RACK IN THE CENTER OF THE OVEN AND PREHEAT THE OVEN TO 350 DEGREES.
- LIGHTLY MIST A 9X13 INCH PAN WITH COOKING SPRAY, THEN DUST WITH FLOUR, SHAKE OUT THE EXCESS FLOUR AND SET PAN ASIDE.
- PLACE CAKE MIX, PUDDING MIX, OIL, GINGER ALE AND EGGS IN A LARGE MIXING BOWL.
- BLEND WITH AN ELECTRIC MIXER ON LOW SPEED FOR 1 MINUTE. SCRAPE SIDES OF THE BOWL WITH A SPATULA.
- INCREASE MIXER SPEED TO MEDIUM AND BEAT 2 MINUTES MORE,SCRAPING SIDES OF BOWL IF NEEDED.
- POUR BATTER INTO THE PREPARED PAN, SMOOTHING THE TOP WITH A RUBBER SPATULA.
- BAKE FOR 35 TO 40 MINUTES OR WHEN THE CAKE SPRINGS BACK WHEN LIGHTLY PRESSED WITH YOUR FINGER
- REMOVE CAKE FROM OVEN AND COOL ON ARACK UNTIL COMPLETELY COOL.
- MEANWHILE PREPARE THE COVERUP FROSTING: 1 BOX INSTANT PISTACHIO PUDDING MIX,1 1/2 CUPS MILK, AND 1 (8OZ.) CARTON OF COOL WHIP, THAWED. WHISK THE PUDDING MIX AND MILK TOGETHER. GENTLY FOLD IN THE COOL WHIP
- SPREAD FROSTING OVER THE TOP OF COOLED CAKE.
