- 2 CUPS LIGHT BROWN SUGAR
- 1 CUP WHITE SUGAR
- 1 1/4 CUPS MILK
- 1/4 CUP LIGHT CORN SYRUP
- 1/8 TEASPOON SALT
- 1 TEASPOON VANILLA
- 1 1/2 CUPS CHOPPED PECANS
Instructions
- HEAT SUGARS, MILK, CORNSYRUP, AND SALT ON MEDIUM HIGH HEAT TO BOILING,STIRRING CONSTANTLY.
- REDUCE HEAT TO MEDIUM AND CONTINUE COOKING FOR ABOUT 15 MORE MINUTES OR TILL THE SOFT BALL STAGE (236 DEGREES ON CANDY THERMOMETER),WITHOUT STIRRING.
- SET PAN ASIDE, AND COOL FOR ABOUT AN HOUR, OR UNTIL SAUCEPAN BOTTOM IS COOL TO TOUCH. DO NOT STIR DURING THIS TIME.
- ADD VANILLA AND PECANS AND BEAT FOR ABOUT 1 MINUTE, JUST UNTIL A LITTLE THICKENED BUT NOT TILL CANDY LOSES ITS GLOSS
- DROP BY SPOONFULS ONTO WAXED PAPER AND LET SET FOR AT LEAST AN HOUR AT ROOM TEMPERATURE.
- WRAP CANDIES INDIVIDUALLY AND STORE IN AN AIRTIGHT CONTAINER.
