1 cup sugar
1/2 cup butter flavor shortening
1/4 cup (1/2 stick) butter
1/4 cup molasses
1 egg
2 cups flour
2 teaspoons baking soda
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/2 teaspoon salt
Sanding sugar, for rolling
Recipe
Special equipment: a 2-tablespoon cookie scoop
Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
In a stand mixer fitted with the paddle attachment, cream together the sugar, shortening and butter until light and fluffy. Add the molasses and egg, and mix to combine.
In a separate bowl, mix together the flour, baking soda, cloves, ginger and salt. With the mixer set to low speed, add the dry ingredients to the sugar mixture, and mix until combined. Chill the dough for 1 hour.
Use a 2-tablespoon cookie scoop to portion the dough, and then roll the portions into balls. Then roll in the sanding sugar and place on the prepared baking sheet. Bake for 10 to 12 minutes.
