Crockpot Soft Taco Filling
4 chicken breasts (or chicken thighs or mixture of them or pork
roast or hunk of beef)
1 packet Fiesta Ranch Dip mix (in the store by the salad
dressing)
1 can black beans (I used the Bush seasoned black beans)
1 can Rotel - undrained (I used the mild, but I can't handle
anything that is too spicy)
1 can corn - drained (fire roasted is great)
1 block cream cheese
Recipe
Cook on high in the slow cooker for 4 hours or 6 on low. Eat
over rice or with tortillas
