    • 2 CUPS OF CORNBREAD STUFFING CRUMBS
    • 1 CAN CORN, DRAINED
    • 1 CAN CHOPPED CHILIS, UNDRAINED
    • 1/2 CUP SOUR CREAM
    • 7 EGGS
    • 1 CUP SHREDDED MONTEREY JACK CHEESE
    • SALSA, IF DESIRED


    Instructions


    1. PREHEAT OVEN TO 400 DEGREES
    2. SPRAY 9X13 INCH BAKING PAN WITH COOKING SPRAY
    3. MIX STUFFING, CORN, CHILIS, SOUR CREAM AND ONE EGG.
      SPREAD EVENLY IN BAKING DISH
    4. MAKE 6 INDENTIONS IN THE STUFFING MIXTURE WITH THE BACK OF YOUR SPOON.
    5. PLACE AN EGG IN EACH INDENTION. PIERCE THE YOLK OF EACH EGG WITH A FORK.
    6. BAKE UNCOVERED FOR 20-25 MINUTES OR UNTIL EGG YOLKS ARE FIRM.
    7. SPRINKLE WITH CHEESE AND BAKE FOR 2-3 MINUTES MORE, OR UNTIL CHEESE IS MELTED
