- 2 CUPS OF CORNBREAD STUFFING CRUMBS
- 1 CAN CORN, DRAINED
- 1 CAN CHOPPED CHILIS, UNDRAINED
- 1/2 CUP SOUR CREAM
- 7 EGGS
- 1 CUP SHREDDED MONTEREY JACK CHEESE
- SALSA, IF DESIRED
Instructions
- PREHEAT OVEN TO 400 DEGREES
- SPRAY 9X13 INCH BAKING PAN WITH COOKING SPRAY
- MIX STUFFING, CORN, CHILIS, SOUR CREAM AND ONE EGG.
SPREAD EVENLY IN BAKING DISH
- MAKE 6 INDENTIONS IN THE STUFFING MIXTURE WITH THE BACK OF YOUR SPOON.
- PLACE AN EGG IN EACH INDENTION. PIERCE THE YOLK OF EACH EGG WITH A FORK.
- BAKE UNCOVERED FOR 20-25 MINUTES OR UNTIL EGG YOLKS ARE FIRM.
- SPRINKLE WITH CHEESE AND BAKE FOR 2-3 MINUTES MORE, OR UNTIL CHEESE IS MELTED
