    2 (2-3 pound) broiler-fryer chickens, cleaned and cut at joints
    1 cup peanut oil
    1 teaspoon ground red pepper
    2 teaspoons salt
    1 8 oz jar pimentos, drained and diced
    2 tomatoes, diced
    1 large onion, minced

    Recipe



    Preheat oven to 400 degrees. Brush chicken pieces on both sides with peanut oil. Season with red pepper and salt Put chicken in a large baking dish and sprinkle with remaining ingredients. Bake 45-60 minutes, until cooked through and browned.
