    List of Ingredients


    • 1 LB HICKORY SMOKED BACON, FINELY CHOPPED
    • 3 ONIONS, FINELY CHOPPED
    • 8 GARLIC CLOVES, FINELY CHOPPED
    • 4 (32 OZ.) CONTAINERS CHICKEN BROTH
    • 5 LBS. FRESH COLLARD GREENS, WASHED, TRIMMED, AND CUT INTO STRIPS
    • 1LB SMOKED HAM, CHOPPED OR 1 HAM BONE WITH MEAT
    • 1/2 CUP RED WINE VINEGAR
    • 1 TABLE SPOON OLD BAY SEASONING
    • 2 TABLESPOONS CELERY SEEDS
    • 4 TEASPOONS SUGAR
    • 1 TEASPOON PEPPER
    • 1/2 TEASPOON SALT


    Instructions


    1. COOK BACON IN A STOCK POT FOR 10-12 MINUTES OR UNTIL SEMI CRISP.
    2. ADD ONIONS AND SAUTE FOR 5 MINUTES, ADD GARLIC AND SAUTE FOR 1 MINUTE.
    3. STIR IN BROTH, GREENS AND REMAINING INGREDIENTS.
    4. COOK, UNCOVERED, OVER MEDIUM HEAT FOR 2 HOURS OR UNTIL GREENS ARE TENDER.
