Recipe Introduction
I think this is better if you make it the day before your want to serve it. This cake is very rich, the corners are the best! I have made this cake for years and it is expected of me to bring to all family gatherings.
List of Ingredients
Bottom layer:
1 box yellow cake mix
1 egg (I use large)
1 stick butter or oleo
Middle Layer:
Chopped pecans-for my family the more the better
I would "guess" that I use 1/2 to 3/4 lb, enough to cover the bottom layer
Top Layer:
1lb confectioners sugar
8 Oz cream cheese
4 eggs
Recipe
Bottom Layer:
Mix these without a mixer, will be very thick like a dough. May have to work a little with your hands to mix thouroghly.
Press into a greased and floured 13 x 9 x 2 pan
Middle Layer:
The chopped pecans
Top Layer:
Mix with mixer, this is in contrast to bottom layer as it is very thin. Pour over pecans
Bake at 350 degrees for 45-55 minutes until top is golden brown.
Cool in pan, cut into bars when cool.
