    Recipe Introduction


    Buckeyes are a chocolate-covered peanut butter candy ball make to resemble the nut by the same name.

    List of Ingredients




    1 1/4 cup butter, softened
    1 (18-ounce) jar creamy peanut butter
    7 cups sifted powdered sugar (about 1 1/2 pounds)
    3 cups (18-ounces) semisweet chocolate morsels
    1 1/2 tablespoon shortening

    Recipe



    Process butter and peanut butter in food processor until thouroughly blended.
    Add 3 cups powdered sugar, and process until smooth.
    Gradually add remaining powdered sugar in 2 batches, processing after each addition until mixture pulls away from sides and is no longer crumbly.
    Shape mixture into 1-inch balls.
    Cover and chill thoroughly.

    Combine chocolate morsels and shortening in top of a double boiler; bring water to a boil.
    Reduce heat to low: cook until chocolate melts, stirring occasionally.
    Remove pan from heat; leaving chocolate mixture over hot water.

    Use a wooden pick to dip each ball in chocolate, coating three-fourths of ball; place on wax paper.
    Carefully smooth wooden pick holes.

    Let candies stand until chocolate hardens.

    Store in airtight contaner in refrigerator

    Yield: 8 dozen
