    Spinach Squares

    Recipe Introduction

    This recipe was given to me by my sister-in-law. This is very tasty treat for those who may not like their greens.

    List of Ingredients

    2 boxes frozen chopped spinach--thawed and all water squeezed out
    1 cup flour
    3 eggs
    1/2 tsp baking powder
    1 cup skim milk
    1/2 cup chopped onions
    1-3 cloves garlic minced
    1 tbsp olive oil
    1/2 cup ground walnuts
    1lb total of 3 types of grated cheeses (muenster, feta, sharp cheddar are what I use)


    Recipe

    Preheat oven to 350 degree

    Saute chopped onion & garlic in olive oil till onions are translucent.

    In a large mixing bowl combine flour, baking soda, cheese, and walnuts and set aside.
    In another mixing bowl combine spinach, eggs, and onion/garlic mixture.

    Combine the spinach mixture w/ the flour mixture and then add the milk to moisten. The batter will be very thick.

    Grease a 9 X 13 baking dish and spread the batter into the bottom of the pan and place in preheated 350 degree oven for approx 30 or until top and sides are slightly browned and toothpick comes out clean. My oven usually takes more like 45 mins.

    Allow to cool for at least 30 mins then cut into squares or whatever size portions you wish to serve.
