    Collard Greens

    List of Ingredients




    6 bunches collards
    1/2 pound smoked meat (turkey, ham hocks, etc.)
    2 large onions
    6 large cloves of garlic
    1/4 cup sugar
    1/4 cup balsamic vinegar white wine
    2 seeded jalapeno peppers

    Recipe



    Pick through greens and remove large stems. Wash thoroughly in salted water as much as necessary to remove all of the dirt or sand. Use both sinks, and wash back and forth from one sink to the other.

    Place meat in large pot and bring to a boil. Place greens in pot along with all other ingredients. Push down as they first begin to cook. Turn down to a simmer and continue cooking for about 2 hours, or until tender. Taste along the way to be sure there is enough sugar. If you need salt, add a little.
