    Carrot Cake

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 1/2 cups granulated sugar
    1 cup oil
    1 teaspoon vanilla
    3 large egg
    1 1/2 cups all-purpose flour
    3/4 teaspoon salt
    2 1/2 teaspoons cinnamon
    1 1/4 teaspoons baking soda
    2 1/2 cups carrots -- grated
    1/2 cup walnuts -- chopped
    1/2 cup raisins -- opt.

    Mix sugar, oil and vanilla, Add eggs and beat well.

    In a separate bowl, combine flour, salt, cinnamon and soda. Stir into the egg-sugar mixture.

    Fold in grated carrots, nuts, and raisins. Pour batter into 12"x7" baking dish (grease bottom only of dish or line bottom with waxed paper). Microwave on HIGH 14-16 minutes, turning every 4 minutes. Allow to "set". Frost with Creamed Cheese Frosting.

    NOTES : This is a wonderful recipe which has been a favorite since I received it in a cooking class in the late 1970's.

    Brown sugar and whole wheat flour may be substituted. A microwave safe (plastic) bundt pan works well.
