DUTCH APPLE CAKE

CRUST
1 1/4 cups flour
1/2 teaspoon salt
2 tablespoons sugar
1 teaspoon baking powder
6 tablespoons butter
FRUIT
3 large apples -- peel and slice
TOPPING
1 egg yolk + 2 Tablespoons milk
3/4 cup sugar
2 tablespoons flour
2 tablespoons butter
1/4 teaspoon cinnamon
Preheat oven to 375f.
CRUST:
Sift the dry ingredients. Work in the butter as for pie crust and add
egg yolk-milk mixture.
Pat into prepared 9" round cake pan as evenly as possible. Cover with
the sliced apples making rings of fruit on the crust.
TOPPING:
Mix topping ingredients well until they are crumbly. Sprinkle over the
cake.
Bake for about 25 minutes or until fruit is cooked and topping is
lightly golden. Serve warm with ice cream if desired.
