1 16 ounce can sliced beets
1 cup cider vinegar
1 cup granulated sugar
1/8 teaspoon salt and pepper (each)
8 large eggs, hard cooked
Combine all but eggs in a saucepan and simmer briefly to dissolve the
sugar. Pour beets and juice into a deep glass or ceramic dish. Peel the
hard cooked eggs and add to beets and juice. Submerge them under the
beets. Let sit one or two days in the refrigerator. Remove and eat whole
or slice to use as garnish on salads.
