    My personal fave from "Joy of Cooking"with my changes:
    Preparing the roast:
    I rub the roast with garlic (dried granular type powder...NOT the cornstarch type
    stuff they sometimes call "garlic powder". I use what is called "granulated garlic" from
    Costco.) fresh garlic is great if you have it but use lots, Kitchen Bouquet (gravy
    seasoning), and usually thyme. Sometimes a tablespoon or so of paprika too...you
    CAN do this the night before and add a cup or 2 of red wine to the pot to use it as a
    marinade. Not necessary but nice. Drain the marinade off before roasting the meat.
    To ROAST:
    Preheat oven to 550f.
    Place the roast fat side up on a rack in a pan in the oven. Reduce heat immediately
    to 350f and cook 18 to 20 minutes per pound for medium rare. I generally make
    about 7 pounders and cook as directed but adding about 15 minutes to the total for
    a MEDIUM cooked roast. Jim isn't into his dinner still mooing.

    Make gravy from the drippings...it's killer.

    A rolled roast would require 5 to 10 minutes longer per pound.
