CHICKEN PASTA ALFREDO

1/8 lb butter -- unsalted
2/3 c heavy cream
2/3 c Parmesan cheese -- freshly grated
1 lb spinach fettuccine
1 whole chicken breast -- skinned & boned
1/3 c Parmesan cheese -- freshly grated
1 pinch ground nutmeg
1/2 tsp salt
1/2 tsp white pepper
Parmesan cheese -- for garnish
Poach and shred chicken; set aside.
In large skillet, melt butter over medium heat, ans stir in cream; as sauce begins to thicken, add 2/3 c. Parmesan; stir and set aside.
In the meantime, cook the fettuccine in boiling salted water until just tender, al dente, and drain in colander.
In large bowl, immediately toss noodles with the butter-cream-cheese mixture.
Add chicken, additional 1/3 c. Parmesan cheese, nutmeg, salt and pepper to taste.
Serve immediately with additional cheese on the side and a generous sprinkling of ground white pepper.

Serving Ideas : Diced baked ham may be substituted for chicken.
