FRIED CHICKEN

4 half chicken breasts without skin
1 1/2 c self rising flour
1 tsp black pepper -- freshly ground
1 pinch cinnamon
salt
1 c buttermilk
shortening or oil
Wash, dry, and salt chicken.
In bowl mix flour, pepper, and cinnamon. Dredge chicken in flour. Set aside five minutes. Dip chicken in buttermilk and then again in flour mixture.
Fry in hot shortening until light golden brown. Reduce heat, cover skillet. Let cook a while. Bring back to high heat, uncovered to crisp the crust. Make gravy as usual with drippings.

NOTES : I use boneless skinless chicken breasts. Regular cut up pieces are what the original calls for.
