    Banana Bread Loaf (Dianne's)

    List of Ingredients




    3/4 cup granulated sugar
    1/2 cup vegetable oil -- (NOT olive)
    2 large eggs
    1 cup mashed bananas
    1 3/4 cups all-purpose flour
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 tablespoon finely grated orange peel -- or lime
    grate only the orange part, not the white.

    Recipe



    Preheat oven to 325f.

    In a bowl combine salt, flour, baking powder, and soda.

    In anmother bowl combine sugar, oil, eggs, and orange peel. Beat vigorously until frothy. Add bananas and blend thoroughly. Fold into flour mixture until blended.

    Pour into greased bread pan. Bake at 325 for one hour until brown.

    Use a toothpick to test for doneness. Remove pan to a rack. Let stand 10 minutes. Invert pan. Cut into 1" slices.

    Yields one loaf.

    NOTES : Use the orange zest or leave it out. It's good either way. I prefer it WITH. You may add 1/2 cup pecans and/or 1/2 cup raisins if you like. Once I even added 1/2 cup peanutbutter and as I recall it worked fine. You might want to try brown sugar instead of granulated sugar. I think it would be very good.

    I have never doubled the recipe but it might be worth a try with one batch.

    YOU CAN MAKE MUFFINS WITH THIS SAME BATTER.

    When I buy oranges I use a zester (like a small potato peeler) to remove the orange part of the peel. I then put it in the Cuisinart and chop it very fine. Put the resulting finely grated peel into a ziplock bag or small freezer container to use as needed. You can just add more to the frozen container as you grate it. Of courese you can also chop it very finely with a knife too...but my way is easier.
