    SAVANNAH RED RICE

    Amount Measure Ingredient -- Preparation Method

    4 slices bacon
    1 medium onion -- chopped
    2 ribs celery -- chopped
    1 small bell pepper -- chopped
    2 cups raw rice
    1 1 lb. can tomatoes -- drained and chopped
    (reserve Juice)
    1 8 oz. can tomato sauce
    1 teaspoon sugar
    1 teaspoon salt
    Black pepper -- to taste
    Tabasco to taste
    SHOULD BE SPICY

    Fry bacon in a heavy pot until crisp; remove. Sauté onions, celery, and bell pepper in bacon grease until onions are trans-lucent. Crumble bacon; return to pot. Add rice; stir to coat with grease. Add tomatoes. Measure reserved tomato juice and to-mato sauce; add water to make 2½ cups (total) liquid. Pour over rice and bring to a boil, stirring occasionally. Immediately lower until barely simmering, cover pot and set timer for, 20 minutes. After 20 minutes, remove from heat and let sit at least 20 minutes. Do not peek. After 20 minutes, fluff with a fork and serve

    NOTES : The Pirates Inn is a great historic restaurant in Savannah. Rumor has it that sailors we kiddnapped and forced to work on pirate ships by being drugged and taken out of the inn by an underground tunnel. A really fun place to visit in historic and gracious Savannah...the jewel of the south!
