    Corkscrew Pasta W. Chiles, Chicken, 'N' Cheese

    Amount Measure Ingredient -- Preparation Method

    8 Ounces Corkscrew Pasta
    2 Tablespoons Oil
    1/2 Cup Mayonnaise
    4 Oz. Can Diced Green Chiles
    4 Oz. Jar Pimiento -- Drain,Dice
    1 Teaspoon Oregano Leaves -- Dried
    1 Teaspoon Cumin -- Dried
    2 Teaspoons Chili Powder -- Dried
    1 Tablespoon White Wine Vinegar
    1/2 Cup Chopped Scallions -- (Green Onions)
    1 Cup Finely Diced Jicama -- Or
    Celery
    1 1/2 Cups Cooked Chicken, Turkey, Or Ham -- Diced
    8 Ounces Shredded Cheddar Cheese
    2 Oz Sliced Ripe Olived -- Drained
    Whole Lettuce Leaves -- To Line Bowl
    Fresh Chopped Parsley Or Cilantro -- For Garnish

    Cook pasta al dente. Drain, rinse in cold water, drain again.

    In large bow combine oil, mayo, chiles, pimiento, dried herbs and spices, and wine vinegar.
    Mix until blended.

    Add pasta, onions, jicama, meat, cheese and HALF of the olives to the dressing. Mix lightly until well coated.

    Line salad bowl or platter with lettuce. Mound salad on lettuce. Garnish with remaining olives and parsley.
