Amount Measure Ingredient -- Preparation Method

1 Pound Can Salmon -- Drained
3 Hard Boiled Eggs -- Cooled & Chopped
1 1/2 Cups Chopped Celery
3 Tablespoons Finely Chopped Onion
1 Cup Frozen Peas -- Or Canned (Drain)
1/2 Cup Mayonnaise (Good Quality) -- Or
Enough To Bind But Not Be Too Squishy
Salt And Pepper To Taste
Do NOT remove salmon bones...CRUSH them so you get the calcium. They will not choke anyone.Gret your hands in there and squeeze them.
Mix all ingredients except mayo. (If frozen peas are used (which I, Dianne, prefer) Pour them right in frozen. It chills the salad so it is cold and ready to eat in 5 to 10 minutes. Mix ingredients well. Stir in mayo to coat. Serve on lettuce if you like. Also good as a sandwich filling.

NOTES : Amounts are flexible. The recipe is written for a large can (about 1 lb) of salmon. For a small can reduce all other ingredients.
