MY BEST POTATO SALAD

5 lbs red potatoes -- boil,peel,and cube
1/2 c onion -- minced
8 eggs -- hard cooked
1 lg green pepper -- chopped
4 stalks celery -- chopped
8 oz Ranch Dressing with Bacon -- opptional
1 c real mayonaise -- Kraft or Best Foods
1 tbsp mustard
2 tbsp vinegar
freshly ground pepper
1 tsp paprika
Separate yolks from hard cooked eggs. Set aside.
Chop egg whites. In very large bowl mix potatoes, onion, egg whites, green pepper and celery.
In small bowl, crush egg yolks. Blend in Ranch dressing, mayonnaise, mustard, vinegar pepper and paprika.
Pour dressing over chpped vegetables. Chill and serve.

NOTES : If Ranch dressing is omitted use more mayonnaise.
Chopped olives (green or black) may be added if desired.
