5 oz. Roquefort cheese
1/2 cup oil
1/4 cup wine vinegar
salt
freshly ground pepper
Mash the cheese with a fork and mix with the oil to form a paste. Make the mixture piquant with vinegar and season to taste with salt. Grind pepper over top
