Buffet Potatoes

1 small onion
1 tablespoon butter
1/2 pound bacon
1/2 pound Swiss cheese -- grated
8 large potatoes
1/2 cup flour
4 cups light cream -- (half-an- half)
1 teaspoon salt
1/4 teaspoon Tabasco sauce
1/2 teaspoon marjoram
1. Boil potatoes skins on. Drain, peel and cube small or mash
2. Fry bacon until crip. Remove from pan, drain and crumble.
3. Chop onion and saute in butter until tender. Add flour to onion to make roux.
Add cream, salt, Tabasco, and marjoram. Stir constantly over low heat to thicken.
4.In a large buttered casserole dish, mix potatoes, cheese, bacon and sauce.
5. Bake at 350°f. for about 20 minutes.

NOTES : Cheese may be added to sauce while it thickens if you prefer. This is a very yummy dish which I copied over 20 years ago from a tv show.
