1 1/8 pounds sauerkraut
1 large onion diced
7 1/8 ounces bacon
1 tablespoon cooking oil/butter combo
2 1/8 cups dry white wine or beer
2 bay leaves
1 teaspoon fresh thyme
10 juniper berries
salt and pepper
1 tablespoon sugar
1 cube bouillon (opt)
1 potato, grated
For two people I take about 500 grams of sauerkraut dice a large onion
and dice about 200 grams of bacon heat about a tablespoon of schmaltz
or duck grease or something of that kind in a large pan that has a
cover. if there is no grease of that kind available, use butter with a
little oil (that will keep the
butter from browning) put in the onion and the bacon and fry a little
until the onions change color. dont let them brown.
Put in the sauerkraut with the help of two forks as it tends to stick
together. fry the sauerkraut for about 3 minutes, stirring constantly.
add about half a liter of dry white wine, or for a stronger taste, use
beer, but not pilsener since that will make it bitter. for a
non-alcoholic alternative, use apple juice. immerse the sauerkraut well
with the liquid. add two bay leaves, a branch of thyme, a handful (about
10)
juniper berries, salt and pepper and add about a tablespoon of sugar.
Add one bouillon cube if you wish. cover and let simmer the whole thing
for about 1 1/2 hours, add liquid if required. take out the bay
leaves and the thyme. add salt, pepper, sugar, as required. when it
suits your taste, peel a raw potato and finely grate it into the
sauerkraut and stir well. wait about 2 to 3 minutes. this will make
the sauerkraut tastier and the sauce will cling better. serve with
anything you want. i have served it with pheasant, or duck, or chicken,
or pork chops - whatever you like.
