Dianne's Special Mashed Potatoes

4 very large russet potatoes -- peel, cube 1"
salt
1/2 cup sour cream. or more
3 large scallions -- or
1/4 cup thinly sliced onion
4 cloves garlic -- fresh or
2 tablespoons extra virgin olive oil
salt and pepper to taste
Mince garlic very fine and slice scallions to no more than 1/4". Saute garlic and onion in the olive oil over low heat until nicely golden brown. Set aside.
Cover cubes of potato with water in a 3 quart saucepan. Lightly salt water. Bring to a boil and simmer until potatoes are fork tender. Drain (save liquid for gravy) into a colander and put potatoes back into empty pot. Set aside for a couple of minutes so that potatoes will be "dry" on the top.
Add sour cream and onion/garlic mixture to potatoes and and mash well using hand mixer. Taste. Add salt and pepper to taste, stirring them in with the mixer.
