    Lime Roasted Sweet Potatoes

    I am trying to NOT post the recipes given to me by cyber friends bit this one is too good to keep to myself. Ella is a fabulous cook. I have always HATED Yams or sweet potatoes but my husband and I are both wild about these!

    Lime Roasted Sweet Potatoes

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 Med sweet potatoes -- peel
    & cut into 1" cubes
    2 Cloves garlic -- finely minced
    1 Tablespoon olive oil
    1/2 Tsp salt
    1/4 Tsp black pepper
    4 Wedges fresh lime

    Preheat oven to 375F. Toss sweet potatoes with oil, garlic, s & p. place in one layer on baking sheet. Roast 30-35 min, turning once or until brown. Just before serving, squeeze fresh lime juice on each serving. Serves 4.....Enjoy!!!!!
