    Make-Ahead Mashed Potatoes

    Great for brunches.


    List of Ingredients


    • 2lbs potatoes, peeled, cut into 1-inch pieces
    • 1/3 C water
    • 1/2 t. salt
    • 1 C. milk
    • 1/2 C. sour cream
    • 1 1/2 t. dry ranch salad dressing
    • 2 T. roasted garlic butter with olive oil


    Instructions


    1. In med. saucepan, combine potatoes, water and salt. Cook over high heat until water comes to a boil. Reduce heat to low. Cover and cook till potatoes are fork tender (15-18 min.). Drain.
    2. With potato masher or mixer mash potatoes, gradually adding 2/3 C. milk. Stir in sour cream and dressing mix.
    3. Spread potatoes evenly into med. casserole. Pour remaining milk over potatoes. Do not mix. Dot with garlic butter.Cover and refrierate 4 hrs. or overnight.
    4. Heat oven to 400 deg. Bake uncovered for 20 min; stir. Continue baking until heated through (20-30 min)
