    2 eggs
    1 cup sugar
    1 cup eggnog
    1/2 cup butter or margarine -- melted
    2 teaspoons rum extract
    1 teaspoon vanilla extract
    2 1/4 cups all-purpose flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    1 1/4 teaspoons nutmeg

    Recipe



    Heat oven to 350?F. Grease bottom only of 9x5" loaf pan. Beat eggs in
    large bowl. Add sugar, eggnog, rum extract and vanilla; blend well.

    Add flour, baking powder, salt and nutmeg; stir just until dry ingredients
    are moistened. Pour into greased pan.

    Bake at 350?F. for 45-50 minutes or until toothpick inserted in center
    comes out clean. Cool 10 minutes; remove from pan. Cool 1 hour or until
    completely cooled. Wrap tightly and store in refrigerator.
