Garlic Cheese Bread

1 cup milk
2 tablespoons sugar
2 teaspoons salt
1 tablespoon butter
1 teaspoon sugar
1 cup warm water
1 active dry yeast (pkg.)
5 cups flour
1 tablespoon garlic -- minced
1 cup old Cheddar cheese -- grated
1 cup Monterey jack cheese -- grated
Recipe
In saucepan, combine milk, 2 tbsp. sugar, salt and butter. Heat until
butter melts. Cool to lukewarm.
In large mixing bowl, dissolve 1 tsp. sugar in warm water, sprinkle
yeast over and let stand for 10 minutes or until foamy. Add milk mixture,
1 cup flour, garlic and cheeses to yeast mixture; beat until well blended,
about 3 minutes. Gradually stir in enough of remaining flour to make a
soft dough.
Knead dough on a lightly floured surface until smooth and no longer
sticky, about 10 minutes. Place dough in a greased bowl, turning dough
to grease all over. Cover and let rise doubled, about 1 hour.
Preheat oven to 350F.
Punch down dough, shape into 2 loaves, and place in two 8 x 4-in. greased
loaf pans. Let rise until doubled.
Bake in oven 45 minutes or until crusts are golden brown and loaves sound
hollow when tapped on bottom. Remove from pans and cool on racks.
